The resulting fats have a profile similar to natural fats, with solid forms closely resembling chicken fat and the ability to produce liquid oils comparable to canola or rapeseed oil.

From Research to Commercialization

Since its launch in 2022, ÄIO has secured approximately $7 million in funding, enabling the refinement of precision fermentation techniques and expanded product development. The company has been recognized with the 2024 Baltic Sustainability Award and has established interest from over 100 companies worldwide for potential collaborations.

“Our final product matches the purity of vegetable oils and surpasses them in pesticide absence,” said co-founder Nemailla Bonturi in an interview with TechCrunch.

Scaling Production and Regulatory Approval

ÄIO plans to construct a production facility capable of manufacturing edible fats at commercial volumes by 2027. The company also intends to license its technology to food and cosmetic manufacturers globally.

Regulatory approval remains a critical step, with the company targeting markets such as Singapore, known for progressive acceptance of alternative food technologies, as initial entry points. The founders acknowledge the necessity of comprehensive safety and compliance evaluations.
